For many of us, the mere mention of Varanasi (or Kashi) evokes a deep, visceral nostalgia. We remember standing by a bustling street corner, a leaf bowl (dona) in hand, waiting with bated breath as the vendor deftly pierced a crisp, golden shell.

In Varanasi, Pani Puri—often called Gol Gappe or Pani ke Batashe is an art form. Unlike the variations found elsewhere, the Banarasi version prides itself on the 'Panch Pani' (five waters). Vendors offer an array of infusions, ranging from the fiery kick of black pepper and ginger to the cooling tang of tamarind and fresh mint. The magic lies in the contrast.
